Auntie Lucy’s Recipe Box: Date Cake

Auntie Lucy’s recipe card for this Date Cake says “Exceptionally Good.” The recipe came to my mother from her dear friend and landlady in New Haven, Michigan, during the 1940s, Marguerite Gardner, and presumes that you know the fundamentals of how to mix a cake batter and how long to leave it in the oven (until a knife comes out clean).

Date Cake (Exceptionally Good)

1 cup dates cut fine
1/2 cup butter
pinch of salt
1 cup white sugar
1 egg
1 1/2 cups flour
1 Tbs. vanilla
1 teas. baking powder
1 teas. baking soda
1 cup warm water

Soak dates in warm water for about an hour. Also add soda. Bake 350 degrees.

Icing: Phildelphia cream cheese and confectioners sugar. Note: My mother never said the words “cream cheese” unless there were preceded by the word “Phil-delphia,” as she said it.
